Well folks, today is the day that I've accidentally invented a gluten-free, vegan apple crumble. Ironically, it is also the day that I've made the best apple crumble ever.
Be ready to have your world rocked. (But be advised, the picture really doesn't do it justice. At all.)
Close your eyes and imagine the following: Apples, almonds and raisins. Smothered in cinnamon sugar. Topped with crunchy oats that have been tossed with a little brown sugar. Oh, and some more almonds. Oh, what's that? You don't like raisins? Replace them with dried cranberries. Or walnuts. Or just leave them out all together. Oat and Apple Crumble

what you'll need
4 or 5 medium apples, peeled, cored and sliced
1 cup rolled oats
1/4 cup olive oil
2 tbsp lemon juice
1/2 cup brown sugar
1 tbsp cinnamon
1 tbsp almond extract (optional)
1/3 cup toasted almonds
1/4 cup raisins (or dried cranberries)
how to do it
Toss apples with the lemon juice, half of the cinnamon, half of the brown sugar, and 1 tbsp of the oil.
Combine the rest of the ingredients in a seperate bowl. Place apples at the bottom of a greased baking dish. Top with oat mixture. Bake at 375F for about 25 to 30 minutes, or until crisp and brown on top.
Serve hot, with iced cream (or a soy alternative) if desired!
